Mexican Stuffed Peppers

To follow up yesterday’s post on how to cook dried beans I am sharing one of our favorite recipes that is easy to make and simply delicious!

Mexican Stuffed Peppers

Ingredients:

  • 2 cups cooked rice
  • 1 1/2 cups cooked black beans
  • 1 (16oz) jar of salsa
  • 4 bell peppers, any color, cut in half length wise with seeds & stems removed
  • 1/4 cup chopped cilantro
  • Mexican shredded cheese

 

Directions:

  • Heat oven to 350 degrees
  • Boil pepper in water for about 7-8 minutes to soften the skins.
  • Mix all ingredients (except cheese) and stuff mixture evenly into each pepper half. Place peppers into 1 or 2 baking dishes.
  • Sprinkle with cheese and bake for 20 minutes or until the cheese is melted and bubbling.

I ate mine with a little bit of sour cream and a few yellow corn chips. Yum! You can also add corn to the mix, the kids like theirs that way. Enjoy!
