Baked Crab Phyllo Cups
Every year for Christmas Eve my family and I come together to exchange presents. My sister makes appetizers, sandwiches, and desserts. I usually bring a dessert because I love to bake. This year I wanted to make an appetizer too! I have made crab dip before for other parties, but I know there will already be two other dips at our Christmas Eve party so I wanted to try and re-create my recipe but still keep the same yummy flavors.
I decided to try my hand at making phyllo dough cups to hold the dip in. You can buy pre-made phyllo cups, but they are a bit too thick for what I had in mind. I wanted more crab filling, less flaky crust. The phyllo dough was easy to work with I was able to get all of the ingredients for this dish on one of my weekly trips to Walmart. Ingredients:
- 1/2 c mayonnaise
- 1/2 sour cream
- 2 tbsp diced red onion
- 1/2 tbsp chopped, fresh dill
- 2 chopped green onions
- 1 tbsp lemon juice
- 1/4 tsp cayenne pepper
- 2 (6) oz cans of lump crab meat, drained
- 1 package of thawed phyllo dough
- melted butter
Directions:
Preheat oven to 350 degrees. In a medium size mixing bowl, mix mayonnaise and sour cream, then add onions, dill, lemon juice and pepper. Stir in the crab meat until well mixed.
Take 5 sheets of the thawed phyllo dough and lightly brush melted butter between each layer. Cut the stack into squares and press the squares into a mini cupcake tin. One stack of five sheets made 12 squares, so you will need to repeat this step to make the full 24 cups.
Spoon about 1 tbsp of the crab mixture into each phyllo cup. Be sure to work quickly because the phyllo dough dries out very fast and will crack.
Bake the cups for 20 minutes, or until the edges of the cups are brown. You can gently pop out one of the cups to make sure the dough is set.
This recipe makes 24 cups and can be doubled if you need more. I garnished each cup with a little sprig of dill and will serve them on a platter. Be sure not to keep them in a warming dish because the dough will most likely soften and then your cups will fall apart.
