BBQ Chicken Quesadillas
As babies my kids all loved to eat veggies, but as they grew older they started to become picky. I’ve had to become creative with my cooking to get them interested in veggies again. I’ve hidden veggies inside casseroles and smothered them with creamy cheese sauce but now I have found a way to serve them on the side, no hiding necessary. The new Birds Eye® Flavor Full veggies can turn your kids into veggie lovers! They’re ready in just minutes and easy to serve every day of the week.
Most recently I paired the Birds Eye® Flavor Full Ranch Broccoli with my BBQ Chicken Quesadillas and the kids ate everything on the plate! To make the quesadilla you need just a few ingredients: shredded chicken tossed in barbecue sauce, fresh cilantro, shredded Monterrey Jack cheese, tortillas and thinly sliced red onions.
Butter one side of each tortillas and heat a frying pan on medium high heat. Place one tortilla butter side down and sprinkle with cheese and all the other ingredients. Sprinkle a little more cheese on top and then place the remaining tortilla butter side up on top. Once the bottom tortilla is brown, flip and cook until the cheese is melted.
While the quesadilla is cooking, you can make your side of Birds Eye® Flavor Full Ranch Broccoli. The Steamfresh packaging makes cooking easy, just place the package in the microwave and cook according to the package. Wait 1 minute then pour the veggies into a bowl. The kids loved the Ranch flavor, I can’t get my son to eat broccoli any other way!
I drizzle a little barbecue sauce over the quesadilla and it tastes delicious with the Ranch flavors in the broccoli.
