Bean and Cheese Quesadillas
This is a quick and easy recipe that we like to make for lunch on the weekends. It’s an easy finger food paired great with homemade salsa and guacamole!
Ingredients:
- 2 c shredded cheese
- 12 small flour tortilla
- 15 oz can of refried beans
- Cilantro (optional)
Directions:
- Lightly spray a warm frying pan with nonstick spray. Place one tortilla in the pan and sprinkle with cheese.
- Sprinkle with chopped cilantro, if desired.
- Spread a spoonful of the beans on another tortilla and place on top of the other tortilla so that the cheese and beans are together.
- These will cook quick so check the tortilla often for browning then flip to cook the other side.
Serve with sour cream, salsa and/or guacamole. Enjoy!
