Broccoli & Cauliflower Salad
- 5 c broccoli, cut off the florets, no stems
- 5 c cauliflower, chopped into small pieces
- 2/3 c chopped green onions
- 2 c shredded medium or sharp cheddar cheese (not the fancy shred)
- 5-6 pieces very crisp cooked bacon, chopped into tiny pieces (or 1/4c bacon bits)
- 1/4 c sunflower seeds
- 1/3 c raisins
- 1/2 c sugar
- 1 c mayonnaise
- 3 tbsp apple cider vinegar
- Combine broccoli cauliflower and onions in a large bowl.
- In a small bowl, mix dressing ingredients with a whisk until well incorporated.
- Pour the dressing over the veggies and stir until the veggies are covered.
- One hour before serving, add the remaining ingredients and mix well. Refrigerate until ready to serve.

I love this salad for lunch or as a side at a Summer BBQ! Sometimes I like to make it just for myself to eat for lunch during the week. When I do this I set aside the raisins, sunflower seed and cheese and add then to eat lunch so that they don’t get soggy. Enjoy!
