Cheesy Chicken Enchiladas
I love Mexican food and I have been in search of a good enchilada recipe for a long time. Every time I tell my husband that I’m making enchiladas he rolls his eyes. I can’t even count how many recipes I’ve tried but I’ve finally found one that I love! It’s actually from a Lawry’s seasoning packet. The first time I made it according to the package and it was good, but the next time I made few changes to make it even better!
Ingredients:
- 8 small flour tortillas
- Lawry’s Chimichurri Casserole seasoning packet
- 1 lb cooked chicken, cubed
- 1 cup water
- 1 (15oz) can of diced tomatoes with chiles (undrained)
- 1 1/2 cups of shredded Mexican cheese
- Garnish: chopped green onions, sour cream, guacamole
Directions:
- Preheat the oven to 350 degrees.
- Mix water, seasoning packet and tomatoes. Measure 1 cup of the sauce and mix with chicken.
- Fill each tortilla with about 1/2 cup of the chicken mixture and sprinkle with a little cheese.
- Fold the tortilla and place in a 13×9 seam side down. Once all the tortillas are filled, pour the remaining sauce over them.
- Top enchiladas with remaining cheese.
- Bake for 15 minutes or until the cheese is melted.
- Sprinkle with chopped green onions and serve with sour cream and guacamole. (optional)
