Chocolate Cake with Peppermint Icing

When I was younger my family and I would visit my Dad’s family almost every weekend. After dinner the adults would play mahjong and the kids would watch TV with our older cousins, or play games in the backyard. When it was time for dessert my sisters and I would walk around with a small pad of paper and a pencil taking orders for who wants coffee and then report back to our Aunt. As we got older, my parents had parties of their own but we still took all the coffee orders for our guests and served them with dessert!
As young adults my sisters and I graduated from taking coffee orders to drinking coffee ourselves. We often spent night sitting outside on my parent’s back porch sipping our coffee and just talking. Sometimes we even brought out a card table and played a few hands of poker. Even though my Dad has passed away, my sisters and I can still enjoy these memories of good times with our mom and continue to sip our coffee and laugh and reminisce on the back porch with each other.
For this Christmas I wanted to make a dessert to share with my family that would pair wonderfully with our coffee. I took a basic chocolate cake mix, added the 3 eggs that the recipe called for, and instead of water I substituted 1 cup of Coffee-mate Peppermint Mocha creamer. I also swapped out the vegetable oil for melted butter, it makes the cake yummier!
I baked it in a bundt cake pan for 40 minutes at 350 degrees then let it cool on a wire rack. While the cake was cooling, I made a peppermint icing by mixing 3 cups of powdered sugar with 4 tablespoons of Coffee-mate Peppermint Mocha creamer. I mixed this with my electric mixer for about 2 minutes until it was thick and all the sugar had dissolved.
Once the cake is cooled down, spoon the icing around the top edges and let it drip down the side. You can leave the cake on the wire rack so that the excess frosting doesn’t pool at the bottom. Then crush peppermint candies and sprinkle on top. Transfer the cake to a decorative cake plate for serving!
