Corn and Black Bean Salsa
Today I have a quick and easy recipe for you! It is a dish that’s a family favorite for summer and makes a great addition to a backyard barbecue or luncheon. I like to put it on a salad or over grilled fish, but my kids like to eat it just as it is. You can also serve it with chips!
Ingredients:
- 1 (15oz) can of corn, drained and rinsed
- 1 (15oz) can of black beans, drained and rinsed
- 2 tomatoes, seeded and diced
- 1/4 c chopped cilantro
- 1/4 c diced red onion
- 2 garlic cloves, minced
- juice from 1/2 of a lime
- salt & pepper to taste
Directions: Mix all ingredients and let sit for 20 minutes, then serve.

This salsa is so tasty, when I put it on a salad I don’t even use dressing! The juices from the limes and tomatoes, mixed with the garlic make such a great flavor combination. You can serve it with your favorite grilled meats, or even add it to tacos. Enjoy!
