Crunchy Apple Cinnamon Clusters

When Fall comes rolling around it seems like everyone around me is pumpkin crazy, but I love apples so much more! I add them to just about everything – muffins, oatmeal, bread, savory dinner dishes. My list could go on for hours, but instead I’ll start with just one of our favorite apple treats – Crunchy Apple Cinnamon Clusters. My family is just in love with Cinnamon Toast Crunch cereal and when Fall hits our door it only seems natural to add some apples to all of that cinnamon goodness! These little clusters are a yummy treat for after school, on the weekends, or just to share with friends.
Start by lining a large cupcake pan with pieces of wax paper, or you can use cupcake liners in a regular size cupcake pan. Next, peel and chop (2) Granny Smith apples then saute them in a large skillet with (2) tbsp of butter until tender-crisp. Once they are cooked, remove from heat.
Fill a large bowl with (5) cups of Cinnamon Toast Crunch cereal and set aside.
In a large pot or pan, melt 1/4 butter then add (5) cups of mini marshmallows. Continue to stir the mixture until all of the marshmallows are melted. Add the apples and stir.
Pour the marshmallow mixture over the bowl of Cinnamon Toast Crunch and stir until the cereal is completely covered. During this step, the smell of apples and cinnamon makes my mouth water! I always want to take a bite but the marshmallows are hot, I only had to learn that lesson once.
Now, use a spoon the fill the cupcake pan(s) you have chosen. Let the clusters cool. If you’re planning to make these for an event or after sports snack, serving them can be tricky. I like to use seasonal plates just for fun when serving treats, but these clusters really need to be in a bowl and I rarely ever find seasonal printed bowls. So I decided to just make a bowl out of the plate! It’s really easy, here is a step by step picture tutorial:
You can easily fill the “bowl” but lifting the wax paper, or cupcake liner, and adding the clusters directly into it.
I’ve substituted the Cinnamon Toast Crunch for Honey Nut Cheerios on occasion and just added 1 tsp of cinnamon to the mix. They turned out just as good!
