Fluffy Oven Pancakes
As a special treat over this past weekend, I decided to make a breakfast favorite of my childhood for my kids. I remember every once in a while my mom would make us fluffy pancakes. They are not really pancakes, but are delicious nonetheless. We ate them plain with butter and sugar, but I decided to add some fresh fruit to mine. What a great way to start my day!
Ingredients:
- 2 tbsps butter or margarine
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1/4 tsp salt
- 2 tbsp butter, melted
- 1-2 tbsp sugar
- fruit (optional)
Directions:
- Heat oven to 400°F. Add 2 tbsp of butter to a 9-inch pie tin and place in the oven to melt. Once melted, brush butter over bottom and side of pie tin.
- In medium bowl, beat eggs slightly* with wire whisk or fork. Beat in flour, milk and salt just until mixed (do not over beat). Pour into pie plate.
- Bake 25 to 30 minutes or until puffy and deep golden brown. Pour the melted butter and sugar over the pancake and top with fresh fruit (if desired).
*If you are using liquid egg product, such as Egg Beaters, mix the milk, flour and salt together and then stir in the eggs.
I doubled the recipe and used my cast iron pan, this is the way my mom used to make it. Once you take it out of the oven, it looks big and fluffy. After about 30 seconds it started to sink and is then a flat pancake. Get it? It starts out Fluffy and then it look like a Pancake? I never put 2 and 2 together as a kid. I always just thought it was a silly name!
So basically it’s a thick crepe.It sounds good. I had a friend who had cancer and she loved crepes. I’d make them and use pie filling. They were pretty good.

They sound and look delicious! Baking a pancake is most definitely different, but much healthier. You used sugar instead of syrup, this sounds so good!
