Ocean Naturals Greek Tuna Salad Recipe
It’s no secret that I am on a healthy living mission. Fortunately, I love to eat fresh fruits and vegetables, lean meats and whole grains, but sometimes I find myself in a rut when it comes to new and exciting meals! I know what I like to eat and to keep my menu fresh and exciting I like to re-invent my favorites.
For lunches I often eat salads piled high with yummy veggies and one of my most favorite salads is tuna salad. I usually top my greens with tuna, avocado, red onion, and tomatoes but lately I’ve been wanting a little something different so I tried a Greek Tuna Salad! I added the mix on top of greens, and also tried it rolled up in a whole wheat wrap. Both were delicious!
Ingredients:
- 2 (6 oz) can of tuna
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp pepper
- 1/4 c chopped fresh parsley
- 1/4 diced red onion
- 1/4 chopped kalamata olives
- 1/2 c diced tomato
- lettuce/mixed greens
Directions: In a large bowl mix the olive oil, lemon juice, and pepper together. Drain tuna and add to the oil mixture, stir until the tuna is coated.
Add the parsley, onions, olives, and tomatoes. Mix well.
You can add this mixture to a green salad. Or you can layer lettuce leaves, then the tuna mixture on top of a whole wheat wrap, and roll it up for a healthy sandwich option.
I like to use the whole wheat wrap instead of bread to cut down on carbs, but still get the fiber benefits.
