How to Make Almond Milk
When my daughter turned one and transitioned from formula to milk, I knew that I didn’t want to start her on cow’s milk. So, we introduced almond milk to our whole family, and everyone loved it! It is low calorie, low fat, low in sugar, and has a reasonable amount of protein, and is also lactose free. The great part about that is if any of my kids are sick, I don’t have to cut milk from their diet, which would be the case if they were ill and drinking regular cow’s milk.
After visiting the Farmer’s Market a few times with a friend who makes her own Almond Milk, I thought I’d give it a try! So I bought some raw, unpasteurized almonds, a “nut milk bag” and borrowed my moms Vitamix blender!
It’s very simple: First, soak your almonds (about 1.5 Cups of almonds) in water overnight (this activates their enzymes giving you the most nutrition possible).
Then, the next day, drain them and put them in the Vitamix with roughly 6 Cups of water. Blend them on high in the Vitamix for about a minute.
Place the nut milk bag in a bowl, and pour the mixture into the bowl, straining the pulp from the milk. You can save the pulp for other recipes (I haven’t tried that yet).
