Lemon Cake Batter Bites
Last Summer a few friends were in town for our high school reunion and we all had dinner together. It was nice to see so many familiar faces that I hadn’t seen in years! My friend asked if I would make dessert and of course, I said Yes. I don’t really like to cook meals, but making dessert is a different story. Since it was the middle of July and nearly 90+ degrees every day I decided to make a no-bake treat. I usually would make chocolate covered cookie balls, but I wanted to try something new. I always seem to have a lemon cake mix on hand, my husband and I both love lemon, so I decided to try these cake batter bites that I had read about. I’m sure that you could any flavor of cake that you like, just exclude the lemon zest in the recipe of course. With the holidays coming up I thought it would be the perfect time to share the recipe, they would be an easy and delicious treat to bring to your holiday party or include in a cookie assortment.
Ingredients:
- 1/2 c unsalted butter, softened
- 1/2 c sugar
- 1 1/2 c flour
- 1 c dry lemon cake mix
- zest from 1 small lemon
- 1 tsp vanilla
- 1-3 tbsp milk
- White candy melts
Instructions:
Beat butter and sugar with a mixer until combined. Add lemon zest and vanilla, mix. Add cake mix and flour, add milk 1 tbsp at a time until the mixture is a dough-like consistency.
Roll the dough into 1 inch balls and place on a cookie sheet lined with waxed paper. Chill in the freezer for about 30 minutes or until firm.
Melt candy melts in the microwave according to the package instructions, usually for 30-second intervals stirring in between. Once the melts are smooth, take the cake balls out of the freezer and dip them one at a time in the melts with a fork.
Place the candy covered balls back on the cookie sheet and add sprinkles before the melted layer hardens. Isn’t that easy? These cake batter bites were a hit, I can’t wait to try different flavors!
