Lemon Ricotta Pancakes

When the folks over at Hamilton Beach said they wanted me to try out their new Hamilton Beach Wave~Action® System I immediately thought that I would use it to make a smoothie. My kids and I are crazy about smoothies during the hot Summer days, we make them almost everyday! While this blender is awesome at making smoothies, I actually used it first to make a different recipe – pancakes. Once I saw the easy pour lid, I immediately thought how easy it would be to mix my pancake batter in the blender and just pour it out right onto the griddle! This recipe a favorite of mine, and my daughters. Enjoy!
Ingredients:
- 1 c all purpose flour
- 1/4 tsp salt
- 2 tbsp white sugar
- 1/2 tsp baking soda
- 1 c Ricotta cheese (I used part-skim)
- 1/2 c milk
- 2 tbsp butter, melted
- 3 eggs
- 2 tsp lemon zest
Directions:
Start by combining all dry ingredients in a bowl, set aside.
Next, add remaining ingredients except lemon zest into the blender. Blend just until mixed.
On my Hamilton Beach Wave~Action® blender I used the Mix setting.
Next, slowly add your dry ingredients and lemon zest. Mix until the batter is smooth.
Pour your batter onto a greased griddle heated to medium-high heat right from your blender using the easy pour spout.
Cook the pancake for 2-3 minutes per side or until golden brown.
We like to eat our Lemon Ricotta Pancakes with butter, powdered sugar and raspberries.

This blender worked well for my recipe, and as I mentioned above I have used it to make many smoothies with great success – no lumps of fruit in my drinks! The only drawback is that it was very loud, if you want to use it before the kids get up in the morning you may want to wait. I have a few other recipes in mind that I want to make using this blender, next I plan on making granitas. I’ll be back to share how it worked!
