Oatmeal Chocolate Chip Cookies
Last week I really wanted some oatmeal raisin cookies. I had all of the ingredients except raisins, which are kind of important to the recipe. I did however have chocolate chips. Hmm… Oatmeal. Chocolate Chips. Okay, I can work with this. Chocolate chip cookies are my favorite and oatmeal raisin come it at a close second so it really seems like this union was inevitable. I adjusted the oatmeal cookie recipe a bit by using my regular chocolate chip cookie recipe as a reference and they turned out great!
Ingredients:
- 1 cup butter, softened
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups quick or old fashioned, uncooked
- 1 cup chocolate chip cookies
Directions:
- Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
- Add eggs and vanilla; beat well. In a separate bowl, combine flour, baking soda, cinnamon and salt.
- Slowly add the flour mixture to the egg mixture until combined well. Stir in oats and chocolate chips.
- Drop dough by rounded spoonfuls onto ungreased cookie sheets.
- Bake 8 to 10 minutes or until light golden brown. Cool cookies for 1-2 minutes and then transfer to a wire rack to cool completely.
- Store tightly covered. Makes 4 dozen
