Orange Cranberry Yoghurt Bread
Quick breads are always a favorite of mine, both to make and to eat! There are no special machines needed and there are so many variations for quick breads, every one is sure to find one they like. One of my favorite flavor combinations is orange with cranberry, it’s a delicious combination of sweet and tart. When making my quick breads, I like to incorporate a healthy element so that my family and I can enjoy a slice (or two) anytime during the day. This recipe incorporates Mountain High Yoghurt to add moisture to the bread, but also to add calcium and protein!
Ingredients
- 2/3 c butter, softened
- 1 c white sugar
- 2 eggs
- 1/2 c plain Mountain High Yoghurt
- 1/2 c orange juice
- 1 tbsp orange zest
- 2 1/2 c all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c dried cranberries
Directions
Preheat oven to 350 degrees and grease a 9×5 inch loaf pan. In a large bowl, cream butter and sugar. Add eggs one at a time, then add yoghurt, orange juice and zest.
In a separate bowl, combine the dry ingredients (except cranberries) and then add to the creamed mixture. Blend well. Stir in cranberries until well incorporated, be sure to scrape the sides and bottom of the bowl.
Pour the mixture into the prepared pan and bake for 55-65 minutes or until a toothpick comes out clean. If you notice the top of the bread is browning but the toothpick does not come out clean from the center, cover the pan loosely with foil for the remainder of the cook time. Cool for 10 minutes before removing from pan and transfer to a wire rack to cool completely.
For this recipe I used plain Mountain High Yoghurt. This yoghurt has a thick and creamy consistency, which make it perfect for use in baked goods! If the yoghurt you use is too thin, your bread will not bake as fluffy but instead be very dense and heavy. Also, for baking be not to substitute low fat or non fat varieties for the same reason.
