Pizza Muffins
One of the things we love around here is pizza. Every Friday we have pizza and movie night but last week I wanted to do something a little different. I usually make the pizza and it’s divided into four parts with the different toppings that we each like. I normally have a No Substitutions Policy around here but I thought just this one night won’t hurt. So to make it a little bit easier I decided to try pizza muffins! It worked great, everyone gets what they want and it’s less work for me!
Ingredients:
- 2 tubes of biscuits (the small ones)
- pizza sauce (I had spaghetti sauce on hand and it worked fine)
- finely shredded mozzarella or Italian cheese
- toppings: pepperoni, olives, mushrooms, etc.
- nonstick cooking spray
Directions:
- Preheat the oven to 375 degrees and grease a 12 muffin tin.
- Take one biscuit and flatten it with the palm of your hand, press into the muffin tin so that it covers the bottom and sides as best as possible. If it doesn’t come all the way up to the top, that’s okay.
- Top each biscuit is a spoonful of sauce, sprinkle with cheese and then add toppings.
- Bake for 15 minutes.

I am totally going to try this! What a great idea! We like to do “Taco Tuesday” but we also do pizza night on Friday too. (Shows what a lazy cook I’ve become, lol!) Thanks for sharing this. I will for sure give it a try – my boys will love it!
