Potato Cheddar Soup
The last few days here have been cold and rainy, which is not normal here in Southern California. So I took advantage of the chill and make myself some yummy soup! Not chicken noodle soup like you might be thinking, but thick and creamy potato cheddar soup.
Ingredients:
- 4 cups cooked, diced potatoes (approx 3-4 large Russet potatoes)
- 1/4 c butter
- 1/4 c flour
- 2 c chicken broth
- 1 c milk
- 1/2 c sour cream
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 c sharp cheddar cheese
- Garnish – shredded cheese, green onions, cooked/crumbled bacon
Directions:
- Melt butter in large saucepan over medium heat then whisk in flour.
- Gradually whisk in broth, then the milk and sour cream. Add half of the diced potatoes and mash in the pot. Bring to a boil then add shredded cheese, stirring until it’s all melted.
- Add remaining potatoes and cook until heated through. Garnish with shredded cheese, green onions and/or crumbled bacon.
