Rolo Stuffed Cracker Sandwich Cookies

Some of the best cookies are the easiest to make! These 2 ingredients cookies have everything that a good cookie needs – a little bit salty, a lot of sweetness, chocolate, and a gooey caramel center.

All you need is a bag of Rolo candies and a box of butter crackers. You’ll need 2 crackers per Rolo candy, so plan accordingly when you buy your supplies.

Preheat your oven to 350 degrees. Place crackers face down on a cookie sheet, no need for non-stick spray or a baking mat.

Next place an unwrapped Rolo candy on each cracker. Bake in the oven for 3 minutes.

Once you take your crackers out of the oven, gently press another cracker on top of each Rolo to make your sandwich cookie. Don’t press too hard or your candy will ooze out all over and you’ll have a gooey mess!

Wait for your chocolate to cool down before serving or placing in a cookie tin. Enjoy!
