Salmon Patties with Creamy Lemon Dill Sauce
For our Memorial Day weekend barbeque we went to Costco to get just a few things…the Saturday before…with all 3 kids. Wow, that was a mess! I’m not what I was thinking when my husband told me his plans and I said “Why don’t we all go?” Well we survived the lines and the crowds, and also found something that we had forgotten about – salmon! Costco sells a pack of 5 cans of salmon for $11 (I’m guessing here, not sure exactly how much it was). Many moons ago, I would make salmon patties on the weekends for lunch but somewhere along the way I forget about them. So we bough the pack and make a few to go with the garlic shrimp that he was barbequing. They are easy to make and my daughter even helped out by scooping out the mixture for me to form into patties. I hope you enjoy the recipe and make a few for yourself!
Ingredients:
- 2 small cans of boneless, skinless pink salmon
- 1/4 cup of finely diced onions
- 2 eggs, slightly beaten
- 1/2 c seasoned breadcrumbs + extra for breading
- cooking oil
Directions:
- Open and drain salmon cans. Flake with a fork in a large bowl. Remove bones, if you find any. Add the eggs, onions and breadcrumbs to the salmon and mix.
- Divide the mixture into equal parts. We made 6 larger patties, the size of a hamburger patty. You can also make mini patties if you are making them as an appetizer, or for the kids. Form the divided parts into balls and then flatten them into cakes.
- Heat oil in a large pan. Pour the extra breadcrumbs into a shallow bowl and add the patties one by one covered all sides lightly with the bread crumbs.
- Cook the patties for 1-2 minutes on each side until they are crispy and golden brown. Set aside on a plate with a paper towel to drain any excess oil.
We like to serve these with Creamy Lemon Dill Sauce: Mix 1/4 cup mayonnaise, 1/4 cup sour cream, 1 tsp dried dill weed and 2 tbsp lemon juice in a small bowl with a wire whisk.

These are great to make for lunch, dinner, or even for an appetizer. You can eat them with just the dill sauce for dipping or you can put them on a bun with the sauce as a sandwich. But anyway you serve them, they are delicious!
