Spiced Applesauce Breakfast Cake
One of the things I love about Fall is baking. I love it when the house is filled with the lovely scent of cinnamon, nutmeg and apples. I have been waiting to make this breakfast cake since Fall began, but the temperatures here have been in the triple digits! This week the heat has finally subsided so I was able to bake! I usually make this recipe as a loaf, but this time I adjusted the recipe to make it as a cake and it seems to work much better. I sliced it into bars and ate a piece for breakfast with my coffee. Enjoy!
Ingredients
- ½ c brown sugar
- 1 c white sugar
- ¼ c butter or margarine, softened
- 1 ½ cups unsweetened applesauce
- 1 egg
- 1 tsp vanilla extract
- 2 c all-purpose flour
- 2 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ½ tsp salt
- 1 c raisins
- ½ c chopped walnuts (optional)
Directions
- In a mixing bowl, cream butter and sugars together. Add applesauce, egg and vanilla and mix well.
- In a separate bowl combine flour, baking soda, cinnamon, cloves, nutmeg and salt.
- Add to applesauce mixture; mix well. Stir in the raisins and walnuts.
- Pour into a 13 x 9 pan. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before serving.
