Spiced Cranberry Rice Pudding

All year long I love to make desserts for my family, but over the years I’ve had to adjust my recipes to accommodate a few people who are not able to drink milk. Some recipes are easier than others, and some I have to skip altogether. While I was nursing each of my three kids I wasn’t able to eat or drink any dairy and there were definitely a few foods that I missed! But the hardest part was trying to find yummy desserts to make.
Regular milk contains both a1 and a2 proteins. Independent studies have shown that the a1 protein can cause discomfort after consumption, so a lot of people skip milk all together! But The a2 Milk Company™ offers a solution. Their milk naturally contains only the a2 protein, so it can be a great alternative for those who normally aren’t able to drink milk. This recipe for rice pudding is one I’ve made several times and using the a2 Milk® didn’t change the flavor one bit. The best part is that everyone in my family is now able to enjoy it!
Ingredients:
- 3/4 c uncooked rice
- 1 1/2 c water
- 2 1/4 c a2 Whole Milk®, divided
- 1/3 c brown sugar
- 1/4 tsp salt
- 1 large egg
- 2/3 c dried cranberries
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
In a small pot boil water and then add rice, cover and simmer on low for 20 minutes. Once the rice is cooked, transfer to a medium saucepan and add 1 1/2 c of the a2 Milk®, brown sugar, and salt.
Cook the rice mixture on medium-low heat until creamy, about 15-20 minutes, stirring occasionally.
Next, reduce heat to low and add remaining 3/4 c a2 Milk®, cranberries, and vanilla extract. In a small bowl beat egg, then stir into the rice mixture. Stir consistently for about 2 minutes. Don’t forget to stir otherwise the egg will cook separately and you’ll end up with scrambled eggs in your rice pudding!
Once the mixture is heated through, remove from heat, add your spices and stir until combined. Now your rice pudding is ready to serve!
This rice pudding is a delicious, warm dessert that cooks up quickly – perfect to serve at your holiday party!
You can make the rice ahead of time, or even use leftover rice from a previous night’s dinner.
