Easy Pesto Pizza Toast

One of my favorite dinner recipes is this Easy Pesto Pizza. My whole family loves it and it’s easy enough to make during busy weeknights too. I recently received the Hamilton Beach Easy Reach Toaster Oven to try out and this was the first meal that came to mind! When I make it for dinner I use the over because I have to make so many pieces for the whole family. But sometimes I want a piece or two to enjoy myself for lunch! Using a toaster oven was the solution to make this quick and easy dinner into a quick and easy lunch.

 I use sourdough bread to make my Pesto Toast, but you could also use French bread or even a flat bread – any kind that is thick enough to hold the toppings.

After I spread on my pesto sauce I sprinkle the toast with Mozzarella cheese. I highly recommend shredding your own cheese as opposed to using the pre-shredded cheese in a bag. The end result is much tastier and the cheese will melt better. Then I add sliced Roma tomatoes and fresh basil from my garden.

 My husband and I both like fresh ground pepper on ours, either way tastes good.  Next, line the baking sheet with foil and place your toast on top.

I baked (2) pieces of toast in my Hamilton Beach Easy Reach Toaster Oven at 350 degrees for 10-12 minutes. until all the cheese was melted. My favorite part about this toaster oven is that the top rolls up. My previous toaster had a door that opened straight out, so you had to be very careful when removing your food or you would burn your hand on the hot door. I burned my hand a lot! I’m very glad to be avoiding that in my near future.
